Place eggs in a saucepan and add tap water to cover the eggs
by one inch. Bring to a boil over high heat. Once the water
reaches a rolling boil, reduce heat and boil gently for an
additional five minutes for soft boiled eggs and an addition
ten minutes for hard boiled eggs.
Remove from the heat and place eggs in a bowl of iced water to chill promptly to prevent the yolks from turning greenish or grayish. Chill for a few minutes in the cold water until the eggs are completely cooled.
To peel the eggs, crack the shells completely and then remove with the membrane underneath.
Adding a teaspoon or two of vinegar to the water will make the eggs easier to peel.
